Lunchbox Recipes
Going to start this one out by saying....I don't know many parents that like the school lunch making routine, myself included, so all the motivation and help we can get has to be good!
I think once kids are at an age where they can make it themselves, this should definitely be encouraged but until then...or if you just like making sure something nutritious gets eaten during the school day...I hope this list of recipes from my blog will help you out some days when wondering what to put in that bloody lunchbox!
For starters, we have a bento style lunchbox as we are a gluten free household so it can be easier just to put bits of this and bits of that in each compartment rather than your usual cut sandwich type lunch.
We always have a section of fruit (cut up melon and grapes being the faves), a section for cut veggies (mainly carrot and cukes and sometimes beans and snow peas make there way in there!) a section for a sweet treat and then the main savoury section. I love popping leftovers from dinner in there too like cold sausage, mini meatballs or chicken wings for some protein.
So without further ado...here are some of the recipes I commonly pop in the luncboxes. They are all gluten free and nut free and some are dairy free!
Always a winner especially if you have some soft or brown bananas in the fruit bowl that need a second life!
These are so easy and so scrumptious and have had a revamp in our house recently due to the new air fryer (so quick to cook!)
Another favourite because who doesn't love giving their kids what essentially looks and tastes like chocolate lollies but are actually gut health repair bombs plus a protein hit! Boom!
4. Roast Veg, Chicken and Haloumi Salad
If your kids are a bit older or they are already salad fiends, then this is the best salad to pack in a container. It is really yummy cold and can be made without the dressing if you want it to stay nice and crisp and is still delicious without it!
5. Gluten Free Cheese and Bacon Muffins
Seriously delicious and will not come home in the lunchbox! You may also need to keep some for yourself and they also freeze really well!
When I first posted this recipe back in 2013 (!!) it went absolutely nuts and dare I say went a bit viral! These days there are many versions of the puffed rice bar but my kids still love this one the best. Freezes well and can be popped into the lunchbox frozen!
Now these have to be made the night before but they make great school snacks as well as breakfasts! If making for school, instead of using an open glass or bowl, simply make them in a small jar or airtight container and don't forget to pack a spoon 😉
Again, another yummy and easy recipes that freezes well and in a great portion size for a lunchbox! Holds together really well and tastes a treat!
I hope this collection of recipes helps with something new in those lunchboxes.
