Sweet And Ugly Bark Recipe!

This is the most basic of recipes, there's no cooking, it's gluten free and can be made dairy free and is the yummiest sweet snack to have on hand in the fridge or freezer!

The ingredients you are putting together in this recipe have appeared together many times before but this is my favourite way of marrying up the sweet treat trifecta of:

Chocolate ✔️

Peanut Butter ✔️

Fresh Dates ✔️

Sure, you can grab a fresh date, take out the pit, smear it with PB and add a couple of choc chips for a one off sweet treat hit but....this recipe gives you a large supply of small breakable pieces that is easy to store in the fridge and freezer so you always have it on hand when the sweet munchies hit!

All you will need is a rolling pin, baking paper and something to melt your chocolate in so a glass bowl and saucepan for stove top or a glass or ceramic bowl for the microwave.


Ingredients:

About 20 fresh Medjool dates 

About 1/4 jar of good quality (100% nuts and salt only!) smooth or crunchy peanut butter (you can use any nut butter here if you need to stay away from peanuts!)

300gr 70% dark chocolate

1 tspn of cooking salt or salt flakes

How To:

  1. On a flat tray or silicone baking mat, lay down your first piece of baking paper

  2. De-pit the dates and lay them butterflied out next to each other in rows so they are all touching and end up in a big square or rectangle shape

  3. Put down another piece of baking paper on top of your dates and grab a rolling pin and gently roll up and down and side to side until you have a nice thin date layer

  4. Gently peel off that top layer of baking paper like you are peeling contact off a book (remember when you'd spot a bubble in the contact when you were covering school books and had to carefully pull back with even tension? (like that!)

  5. Smear your peanut butter all over your dates with a spoon or spatula until you have covered all the dates in the peanut butter layer


  6. Melt your chocolate in a glass bowl over a simmering saucepan of water, or in a microwave safe bowl in the microwave and keep stirring until all the chocolate is melted and smooth and glossy 

  7. Slowly pour your chocolate layer on top of your peanut butter layer and smooth out until this is also covering all the peanut butter

  8. Gently and slowly sprinkle your salt flakes over the chocolate layer

  9. Pop in freezer for 3-4 hours 


  10. Remove tray or silicone mat and slice into messy pieces of all different sizes...this is where your ugly bark shape comes in! Because sometimes we want a small piece and sometimes we want a bigger piece so just crack those pieces up any which way!


  11. Store in glass containers in fridge or freezer!

  12. Because it makes plenty, you may want to wrap a few pieces up in baking paper to give to friends or take in to your work fridge! 😉


    So there you have it! Sweet and Ugly Bark - no need to be persnicketty or a perfectionist with this recipe! And enjoy a lovely little sweet treat after meals without any of the processed sugar!
