Smug Salad for one
This very yummy and healthy lunch for one came about for 2 reasons:
- I hadn’t done a grocery order since coming back from holidays
- I had eaten enough sugar and carbs for the whole year in the last 2 weeks alone and wanted something delicious that didn’t contain too much of either!
You don’t need to use any oil to dress this salad as the avocado in it acts as your ‘oil’ and this recipe is high in:

🌱 Antioxidants
🌱 Fibre
🌱 Vitamins and Minerals
🌱 Good fats
This quick lunch (I made it in 5 minutes) out of these minimal fresh ingredients and a few pantry staples will balance your blood sugars and give you energy for the rest of your afternoon!

Ingredients
1 x small avocado (diced)
1 x small can of tuna (drained)
1 x spring onion (diced)
1 x Lebanese cucumber (diced)
1 x small handful of raw almonds (I roughly chopped 15)
A few stalks and leaves of fresh coriander roughly chopped
1 x tblspn of Vino Cotto or balsamic vinegar
1 x generous sprinkle of everything but the bagel or alternatively use salt and black and white sesame seeds to taste
Method
1 x small can of tuna (drained)
1 x spring onion (diced)
1 x Lebanese cucumber (diced)
1 x small handful of raw almonds (I roughly chopped 15)
A few stalks and leaves of fresh coriander roughly chopped
1 x tblspn of Vino Cotto or balsamic vinegar
1 x generous sprinkle of everything but the bagel or alternatively use salt and black and white sesame seeds to taste
Method
Add all ingredients to a bowl, give it a good mix, add your toppings, mix again and enjoy!
Feel healthily smug, even if this is the only good-for-you meal you eat today, and feel extra clever that you made it out of not much at all!
