I usually make four at a time for my crew, but here’s the breakdown for one.
Ingredients

1 small potato
-
½ medium avocado
-
1 boiled egg
-
1 tbsp Greek yoghurt
-
¼ cup grated cheddar or mozzarella
-
Drizzle of honey
-
Salt & pepper
-
Squeeze of lemon juice
-
Everything But The Bagel seasoning
(or sesame seeds + salt) -
Olive oil spray

Method
1. Boil the potato
Boil until soft and tender, then drain.
2. Crisp the base
Lightly spray your mini waffle maker or a heavy-based fry pan with olive oil.
If using a waffle maker:
Place the potato inside, sprinkle over the grated cheese, press gently and cook until golden and crispy.
If using a fry pan:
Place the potato in the pan, sprinkle with cheese, then use a metal egg flip to press it down flat. Cook until golden underneath, flip and cook the other side.
3. Make the protein topper
In a small bowl, mash together:

4. Assemble
