Lime and Cashew Bliss Balls

I came up with this recipe because I needed to make a quick and easy snack for a website video shoot day we had at my house recently. We had a few film crew people here all day as well as some of my lovely customers arriving for the testimonial filming. So we needed high energy, healthy snacks stat!

I got up early and came up with this recipe because I had some lovely lemons sitting in my fruit bowl. I'd never mad a bliss ball with lemon and it was soooo good! Then a few batches later I made them with lime and it was even better! So really these could be made with either a lemon or lime and you won't be disappointed either way so whatever takes your fancy or whatever you have in your fruit bowl will work!


2 cups of raw cashews
1/2 cup of desiccated coconut (plus extra for rolling the balls in later)
3 tblspns of vanilla protein powder (I use Nutra Organics Thriving Exotic Vanilla. If you don't have protein powder, use 1 tspn of vanilla bean powder or paste)
3 tblspns of maple syrup (you could also use honey or rice malt syrup if preferred) The juice of 1 whole lime or 1 whole lemon 1 tblspn of coconut oil a pinch of good quality salt


Place all ingredients in a high speed blends and whizz until it looks like cookie dough.

Grab a golf ball size amount, squeeze in your hand to condense and then roll between you palms until you have a ball

Roll in some desiccated coconut

Place in fridge for an hour to firm up.

These will store well for at least a month in an airtight container in the fridge.

This recipe makes about 18 golf ball sized bliss balls!
