Gluten Free Anzac Biscuits
This week I ordered my groceries online and received a gift with my order....it was two packets of Anzac Biscuits and while I loved the thoughtful touch of this added item to my order in the week leading up to Anzac Day, I had to take them into my team as we are a gluten free household and they contained wheat flour and oats.
This gift made me feel like I was missing out so I thought I best come up with a gluten free biscuit recipe that we could all enjoy and one that didn't contain oats either.
We aren't coeliac but my gluten intolerance is quite severe and it definitely doesn't agree with my kids or hubby either and we find it pretty easy sticking to a gluten free diet at home. Even oats will make me very sick, as while some gluten free people can tolerate gluten free oats, I react to the protein in them (avenin) which is similar in structure to the protein in gluten (gliadin) so I need to leave oats alone too!
This recipe I threw together got the tick of approval from everyone including my husband who likes to think of himself as a bit of a biscuit aficionado...

Ingredients
3 tblspn of golden syrup
125gr butter
2 tblspn of hot water
3/4 cup of gluten free SR Flour
1/4 cup of almond meal
1 cup of quinoa flakes
1 cup of desiccated coconut
1/2 cup coconut sugar
Method
Heat oven to 180 degrees and line a baking tray with baking paper
Melt butter and golden syrup together, add boiling water and pour into mixing bowl
Add all dry ingredients and stir well
Roll into small balls and flatten with hands, place on lined baking tray
Bake on middle shelf for 15-20 mins
Let cool on wire rack and store in an airtight container
